Walnut and Sultana Loaf

Some days I just get a real itching to bake. On one such day recently I happened to stumble across Chantelle’s recipe for Fruit Tea Bread. It looked like just the thing. Except that I really don’t like mixed dried fruits – I only like sultanas, picky thing that I am. And I love nuts in sweet treats. And I also love brown sugar in baking. So, I dug through my cupboard, gathered together the bits and pieces I had to hand, and whipped up a recipe of my own. The best bit about this recipe is the soaking of the sultanas in tea {thank you to Chantelle for the inspiration}. You will be tempted to skip this bit, because it means you have to wait a little. Don’t skip it! It makes the loaf beautifully moist.

Walnut and Sultana Loaf

1 cup sultanas
2 cups cold tea (I used decaf, my preferred option)
1 1/2 cups self raising flour
1/4 cup brown sugar
1/3 cup caster sugar
1 teaspoon of cinnamon
1/2 teaspoon nutmeg
3/4 cup chopped walnuts
125g butter,  melted
1 egg, lightly beaten

Preheat oven to 180 degrees celsius. Grease and line a loaf tin.
Soak the sultanas in the tea for at about an hour (more is good, overnight is even better).
Sift flour, sugars and spices into a bowl.
Add walnuts, butter and egg, and stir to until just combined.
Pour into the loaf tin and bake in the oven for about 45 minutes, or until golden brown on top and an inserted knife comes out clean.

Serve with freshly brewed tea and lashings of real butter.

  1. I’ve just made some peanut chocolate fudge… a healthy version but…. and this week we made white chocolate and macadamia cookies. Oh dear! And no exercise at all at the moment, until the little operation down below is all healed. After which I will need to take a lot!

    I used to make a loaf where fruit was soaked in tea, and will definitely try this one. Thanks for the remider – great.
